Panera Inspired Salad

I love Panera's BBQ Chopped Chicken salad. However, it's so expensive! So I created my own easy to make half scratch salad.  I personally don't like peppers, onions, or tomato so this excludes these items. Something even better about this salad is BBQ sauce has a lot less calories than most dressings!

Shopping List
Lettuce of your choice (I use iceburg and throw in some spinach if I have any)
Carrots (matchstick)
Finely Shredded Cheese (cheddar or Mexican blend)
Black Beans
Corn (frozen sweet corn)
Ranch Dressing (I use Marzetti)
BBQ sauce (I use Bullseye Carolina)
Tostitos chips (don't get Giant Eagle brand they weren't very good)

To Make:
*Put corn in microwave container (I always use glass bowls). Put a small amount of water in container microwave until hot (about 2 min) Cook some for just now or cook some for rest of week.
*Cut up lettuce (cut up the whole head and store in a large ziplock bag)
*Put in a handful of carrots
*Rinse black beans with water in strainer (store in container for future use) (You can use one container for beans and corn if you make enough corn)
*Put a good handful of beans and corn on salad (ok if corn is still warm)
*Add a sprinkle of cheese
*Put on a small amount of Ranch dressing
*Add BBQ sauce (a little more than the ranch)
*Crunch up a handful of Tostitos to top it off
Enjoy!
